Toasted Maple Walnut and Pear Salad

Ingredients
- 3/4 cup walnuts halves or pieces
- 2 tbsp maple syrup pure
- 1 Bosc Pear large, cored and cut into cubes
- 2 tbsp cider vinegar
- 2 tbsp olive oil extra virgin
- 150 gr Baby Spinach
- salt and pepper to taste

Instructions
- In dry frying pan set over medium-high heat, cook walnuts for 5 minutes, stirring often, or until golden and fragrant. Add maple syrup and pear pieces to frying pan; continue to cook for 3 to 4 minutes, stirring gently, or until pears are tender. Transfer mixture to bowl to cool completely.
- Place vinegar in another bowl. Whisk in oil, salt and pepper. Add spinach and cooled pear mixture; toss to combine. Serve immediately.

- 1/2 cup maple syrup
- 1/3 cup applesauce unsweetened
- 1 tsp vanilla extract
- 1/3 cup cocoa powder unsweetened
- 1/3 cup whole wheat flour
- 1/4 tsp salt
- 1/4 tsp baking powder
- 3 tbsp butter softened
- 3 tbsp cocoa powder unsweetened
- 1 tbsp honey
- 1 tsp vanilla extract
- 1/4 cup confectioners (icing) sugar

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch square pan
- Melt 1/4 cup butter in a large saucepan over low heat. Remove from heat and stir in maple syrup, eggs, applesauce, and 1 teaspoon vanilla extract. Beat in 1/3 cup cocoa powder, flour, salt, and baking powder. Spread into prepared pan.
- Bake in preheated oven until brownies are just set in the center, 20 to 25 minutes.
- Combine 3 tablespoons butter, 2 tablespoons cocoa powder, honey, 1 teaspoon vanilla extract, and confectioner's sugar in a bowl; beat until smooth. Frost brownies while they are still warm.
- Cut into 16 slices and enjoy just one!

- 1/4 cup maple syrup
- 2 tbsp soy sauce
- 1 clove garlic
- 1/4 tsp garlic salt
- 1/8 tsp black pepper ground
- 1 pound salmon

- In a small bowl, mix the maple syrup, soy sauce, garlic, garlic salt, and pepper.
- Place salmon in a shallow glass baking dish, and coat with the maple syrup mixture. Cover the dish, and marinate salmon in the refrigerator 30 minutes, turning once.
- Preheat oven to 400 degrees F (200 degrees C).
- Place the baking dish in the preheated oven, and bake salmon uncovered 20 minutes, or until easily flaked with a fork.
